Do you like tapioca? I've alway loved it and while I used large pearl for this recipe, I have a box of quick cooking tapioca in the pantry and whenever I feel the need of comfort, I make it...the kind where you beat the whites and add at the end. Be sure to use vanilla bean paste for flavoring. It's just the right touch. The recipe on the box is perfect. Not too sweet, but it sure hits the spot.
No recipe here today...this is just a simple dessert. Boil some rhubarb (or any fruit you prefer) with sugar and a touch of water until it's jam consistency. Add a touch of rosewater. Just a touch. Take some large pearl tapioca (which happened to be in my pantry, but you could use any tapioca), follow the directions on the package to make a lovely tapioca and layer the two.
Simple, and pretty too.
